Istanbul eats across two continents: meze and fish by the Bosphorus, ocakbaşı grills, pide and lahmacun halls, and a young generation of chefs reworking Anatolian ingredients. Michelin only arrived in 2022 and now rewards a lively mix of fine dining and everyday cooking.
