A blue cheese made and aged by Clemson University since 1941.
Clemson's own cheese started in an unused railroad tunnel in 1941 and still comes from campus. Buy a wedge at the student-run dairy shop, have a scoop while you are there, and take some home.

Cook it at home: Blue cheese and ham ball
A Clemson party snack built on the university's own blue cheese. This is our version: cream cheese, blue cheese and diced ham rolled in pecans, served cold with crackers.
Pans and tools
- Mixing bowl
- Wooden spoon or hand mixer
- Plastic wrap
You’ll need
- 8 oz cream cheese, softened
- 6 oz Clemson Blue Cheese (or another firm blue), crumbled
- 1 cup finely diced cooked ham (about 5 oz)
- 2 green onions, thinly sliced
- 1 tsp Worcestershire sauce
- 1/4 tsp black pepper
- 3/4 cup pecans, toasted and finely chopped
- 2 tbsp chopped parsley
- Crackers and apple slices, to serve
Steps
- Beat the cream cheese until smooth.
- Stir in the blue cheese, ham, green onions, Worcestershire and pepper.
- Scrape onto plastic wrap, shape into a ball and wrap tightly.
- Chill at least 2 hours, until firm.
- Mix the pecans and parsley on a plate and roll the ball in them to coat.
- Let it sit 15 minutes at room temperature, then serve with crackers and apple slices.
Make it a day ahead; the blue cheese flavor spreads through overnight.
Use a firm blue that crumbles cleanly.
Contains: Milk, tree nuts (pecans), wheat (crackers).
