The real one
You need
- 1 lb (450 g) ground pork
- 5 garlic cloves, grated
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp salt
- 4 potato rolls
- 4 eggs
- 4 slices American cheese
- 1 tbsp oil
- Banana ketchup or sriracha mayo
How to make it
- Mix the pork with garlic, sugar, soy, vinegar, paprika, pepper and salt. Shape 4 thin patties a little wider than the rolls.
- Fry the patties in oil over medium heat, 3 to 4 minutes a side, until caramelized and cooked through. Watch them: the sugar browns fast.
- In the same pan cook the eggs soft, scrambled or fried, and melt the cheese on top.
- Toast the rolls, add a patty, egg and cheese, and a spoon of banana ketchup or sriracha mayo.
Tips
- The patties freeze well raw between sheets of parchment.
- For a Boonie's-style twist, serve between two thin rice-flour pancakes.
