6 slices pork roll (Taylor ham), about 1/4 inch thick
2 kaiser rolls or brioche buns
2 eggs
2 slices American cheese
1 tbsp butter
Salt, pepper and ketchup
Optional: 2 hash brown patties
How to make it
Cut 4 small slits around the edge of each pork roll slice so it doesn't curl.
Fry the slices in a dry skillet over medium heat, 2 minutes a side, until browned at the edges.
Fry the eggs in butter and melt the cheese on top. Toast the rolls (and crisp the hash browns if using).
Stack three slices of pork roll per roll, then the egg and cheese, the hash brown, and salt, pepper and ketchup. Wrap in foil for a minute before eating.
Tips
The order is always meat, egg, cheese: say "SPK" for salt, pepper and ketchup.
