How Chef picks
We started with our own city guides and Long lines lists, then read this year's critics, city guides and best-of lists, and kept the places that more than one good source named and that are open now. 50 places in 29 states, from 25 sources; each place's page says where we found it. Ranked by how good the one sandwich is, how far people come for it and whether they still line up. One to order at each, so you never stare at a menu board. Fifty, not a hundred: that's as far as the evidence went. A new list every month.
