Roasted eggplant (and potato) slices, a lamb or beef sauce spiced with cinnamon, and a thick, golden béchamel. Let it rest before cutting so it holds its layers.

Ingredients

Steps

  1. Heat the oven to 425F (220C). Brush the eggplant and potato slices with oil, sprinkle with salt and roast on sheet pans 20 to 25 minutes, turning once, until golden and soft. Lower the oven to 350F (175C).
  2. For the sauce, cook the onion in the oil until soft, 6 minutes, then the garlic 1 minute. Add the meat and brown it, breaking it up, 10 minutes.
  3. Add the wine and boil 2 minutes, then the tomatoes, paste, spices, salt and pepper. Simmer 30 minutes, until thick and not watery. Remove the cinnamon stick and bay, stir in the parsley.
  4. For the béchamel, melt the butter, whisk in the flour and cook 2 minutes. Whisk in the warm milk gradually and cook, whisking, until thick, 5 to 8 minutes. Off the heat, season with salt and nutmeg, whisk in the yolks one at a time, then half the cheese.
  5. Oil a 9 by 13-inch baking dish. Layer the potatoes in the bottom, then half the eggplant, all the meat sauce and the rest of the eggplant.
  6. Pour over the béchamel and smooth it. Sprinkle with the remaining cheese.
  7. Bake 45 minutes to 1 hour, until the top is deep golden and puffed. Rest at least 30 minutes, ideally longer, before cutting.
