The dish to eat

Beef or lamb slow-cooked in a clay urn with preserved lemon, saffron, cumin and smen, buried overnight in the ashes of a hammam furnace.

Best at Chez Lamine Hadj Mustapha, Souk Ablueh, off Jemaa el-Fna. Get: Tanjia and mechoui by weight, with bread, cumin and salt

Five places, and what to order

  1. Amal Centrefamily-run · Gueliz
Get: Seasonal salads (lentil, cauliflower, leek), fish tagine, and the Friday couscous
  2. Mizaancounter · Gueliz
Get: Kefta, labneh and harissa dishes as shared plates
  3. Naranjfamily-run · Riad Zitoun el Jdid, Medina
Get: Kibbeh, fatet batinjan and the chicken salad, shared
  4. Le Trou au Murfor tanjia · Medina, near Ben Youssef
Get: The tanjia and the pastilla, on the rooftop
  5. Le Jardinfor tanjia · Medina, Souk Sidi Abdelaziz
Get: Tanjia, in the green courtyard

The market

Night / open-air market. Harira, grilled meats, snails, orange juice

How it works here

Tip: Leave about 10% at restaurants and a few dirhams at stalls.

Book: Book the riad restaurants a day ahead; the medina's stalls and the square at night are walk-in.

When locals eat: Lunch 1-3pm, dinner from 8pm.
