Red cranberries, green pistachios, white chocolate. Broma rolls the dough into logs, coats them in more pistachios, and you slice and bake whenever you want. The best make-ahead cookie on this list.

Brown sugar butter dough with cranberries, pistachios and white chocolate, rolled into logs coated in more pistachios, chilled, sliced and baked, then dipped in white chocolate.

You need

How to make it

  1. Beat the butter and both sugars until light and fluffy, about 2 minutes. Scrape the bowl, add the yolk and both extracts and beat until smooth.
  2. Mix in the flour and salt on low just until no streaks remain. Stir in half the pistachios, the cranberries and the chopped white chocolate.
  3. Split the dough in half and roll each on plastic wrap into a 12-inch log about 1 inch across. Roll the logs in the rest of the pistachios, wrap and chill at least 2 hours (or freeze for a month).
  4. Heat the oven to 350°F and line two sheets with parchment.
  5. Slice the logs into 1/4-inch rounds and set them 1 inch apart.
  6. Bake about 10 minutes, until just golden at the edges. Cool on the sheets.
  7. Melt the dipping chocolate with the coconut oil in 15-second bursts, stirring. Dip half of each cookie, set on parchment and let it harden, about an hour.

For a swap: Sturdy. The dipped ones need an hour to set first.
