Maple bacon Brussels sprouts

Raw bacon goes on the pan with the sprouts, so its fat roasts them as it crisps, and the maple syrup lacquers the lot. Five ingredients, one bowl, no stirring at the stove.

The holiday side that converts people who say they hate sprouts, with almost no work.
You need
- 20 oz (567 g) Brussels sprouts, stems trimmed, halved lengthways
- 5 slices bacon, cut into 1/2-inch (1 cm) pieces
- 1/4 cup (60 ml) pure maple syrup
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
How to make it
- Heat the oven to 400°F (200°C).
- In a mixing bowl, toss the sprouts, raw bacon, maple syrup, salt and pepper until everything is coated.
- Spread it all on a large rimmed baking sheet in one layer, sprouts cut side down where you can, bacon pieces spread out so they crisp rather than steam.
- Roast 30 to 40 minutes, stirring halfway, until the bacon is crisp and the sprouts are deeply caramelized at the edges and tender when pierced with a knife.
- Scrape everything, including the sticky bits on the pan, into a serving dish and serve warm.
Chef's notes- Use real maple syrup; pancake syrup burns and tastes flat.
- Thick-cut bacon needs the full 40 minutes; regular bacon is often done at 30.
