   Chef's quick version

   Turmeric dill spears

   15 min, then 1 day · makes 1 quart · A mild, bright refrigerator pickle. Turmeric and a little coriander make it taste warm without heat.

   You need

   • 5 Kirby cucumbers, cut into spears
   • 1 cup (240 ml) distilled white vinegar
   • 1 cup (240 ml) water
   • 1 tbsp kosher salt
   • 2 tsp sugar
   • 1 tsp ground turmeric
   • 1 tsp coriander seeds
   • 4 garlic cloves, smashed
   • A handful of dill

   How to make it

   1. Pack the spears into a jar with the coriander, garlic and dill.
   2. Boil the vinegar, water, salt, sugar and turmeric, stirring until dissolved.
   3. Pour over the spears to cover.
   4. Cool, close and refrigerate. Ready in a day; keeps 3 weeks.
