   Chef's quick version

   Caraway garlic dills

   15 min, then 1 day · makes 1 quart · A classic refrigerator dill with toasted caraway. Toasting the seeds for a minute makes them smell like rye bread.

   You need

   • 5 or 6 Kirby cucumbers, halved or quartered
   • 1 cup (240 ml) white vinegar
   • 1 cup (240 ml) water
   • 1 tbsp kosher salt
   • 1 tsp sugar
   • 1½ tsp caraway seeds, toasted
   • 6 garlic cloves, smashed
   • 1 tsp black peppercorns
   • A handful of dill

   How to make it

   1. Pack the cucumbers into a jar with the caraway, garlic, peppercorns and dill.
   2. Boil the vinegar, water, salt and sugar.
   3. Pour over the cucumbers to cover.
   4. Cool, close and refrigerate. Ready in a day; keeps 3 weeks.
