   Chef's quick version

   Three-pepper hot chips

   15 min, then 1 day · makes 1 quart · Habanero, jalapeño and chili flakes in a dill brine. Thin chips soak it up overnight.

   You need

   • 1¼ lb (570 g) Kirby cucumbers, sliced ⅛ inch
   • 1 cup (240 ml) white vinegar
   • 1 cup (240 ml) water
   • 1 tbsp kosher salt
   • 1 tsp sugar
   • 1 habanero, sliced
   • 1 jalapeño, sliced
   • 1 tsp red pepper flakes
   • 4 garlic cloves, sliced
   • A handful of dill

   How to make it

   1. Wear gloves for the habanero. Pack the slices into a jar with the peppers, garlic and dill.
   2. Boil the vinegar, water, salt, sugar and pepper flakes.
   3. Pour over the slices to cover.
   4. Cool, close and refrigerate. Ready the next day; it gets hotter all week.
