Chicken with Crushed Olive Dressing
Roast chicken plus a sharp, salty dressing spooned over at the end.
⏱ 40 min · easy · 🍽 serves 4
Ingredients
- 4 chicken breasts, bone in, or 8 thighs
- 3 tbsp olive oil, plus 1/3 cup for the dressing
- 1 cup green olives, pitted and crushed
- 1 shallot, finely diced
- 2 tbsp red wine vinegar
- 1 tbsp chopped oregano
- 1/2 tsp chili flakes
- Kosher salt and black pepper
Steps
- Heat the oven to 425F. Rub the chicken with 3 tbsp oil and season well.
- Roast 35 to 40 minutes until the skin is browned and it reads 165F.
- Crush the olives with the flat of a knife rather than chopping them, so they stay in rough pieces.
- Combine with the shallot, vinegar, oregano, chili and the 1/3 cup oil. Let it sit while the chicken cooks.
- Spoon the dressing over the chicken as it comes out of the oven.
👨🍳 Crushing rather than chopping keeps texture in the dressing. Chopped olives turn to paste and the whole thing goes flat.
