Skillet-Charred Creamed Corn
Charring the kernels first turns a bland side into the one people ask about.
⏱ 30 min · easy · 🍽 serves 4
Ingredients
- 6 cups corn kernels, fresh or frozen and thawed
- 2 tbsp butter
- 1 small onion, finely diced
- 1 cup heavy cream
- 2 oz cream cheese
- 1/4 tsp smoked paprika
- Kosher salt and black pepper
- 2 tbsp sliced chives
Steps
- Get a cast iron skillet very hot over high heat. Add half the corn in a single layer and leave it alone for 3 minutes until spotted black. Tip it out and repeat with the rest.
- Lower the heat to medium, melt the butter and cook the onion 5 minutes until soft.
- Return all the corn, add the cream and cream cheese and stir until the cheese melts and the sauce thickens, about 6 minutes.
- Season with smoked paprika, salt and plenty of pepper. Finish with chives.
👨🍳 Frozen corn works, but dry it on a towel first or it will steam instead of char.
