⏱ 3 hr 30 min · easy · 🍽 serves 4
Ingredients
- 2 racks baby back ribs
- 3 tbsp brown sugar
- 1 tbsp smoked paprika
- 2 tsp kosher salt
- 2 tsp garlic powder
- 1 tsp black pepper
- 1 tsp mustard powder
- 1/2 tsp cayenne
- 1 cup barbecue sauce
- 2 tbsp cider vinegar
Steps
- Heat the oven to 275F. Pull the silver membrane off the back of each rack with a paper towel for grip. Skip this and they will be chewy.
- Mix the sugar, paprika, salt, garlic powder, pepper, mustard and cayenne. Rub it over both sides.
- Wrap each rack tightly in foil and set on a sheet pan. Bake 2 1/2 hours.
- Open the foil carefully. The meat should have pulled back from the bone ends.
- Stir the vinegar into the barbecue sauce and brush it on. Raise the oven to 425F and bake uncovered 15-20 minutes until the glaze bubbles and darkens.
- Rest 10 minutes before cutting between the bones.
👨🍳 Foil-wrapped at 275F is a home oven imitating a smoker. Any hotter and they tighten instead of surrendering.
