Slow-Roasted Pork Shoulder for a Crowd
Salt, sugar, and six hours of leaving it alone.
⏱ 7 hr · easy · 🍽 serves 10
Ingredients
- 7 lb bone-in pork shoulder
- 1 cup sugar
- 1 cup kosher salt
- 7 tbsp brown sugar
- Rice, lettuce leaves and kimchi to serve
Steps
- Rub the shoulder all over with the sugar and salt and refrigerate at least 6 hours, ideally overnight.
- Rinse the cure off and pat dry. Heat the oven to 300F.
- Roast fat side up in a shallow pan for 6 hours, basting with the pan juices every hour, until it collapses under a fork.
- Raise the oven to 500F. Pat the brown sugar over the top and roast 10 to 15 minutes until it forms a dark crust.
- Rest 20 minutes, then pull it apart at the table.
- Serve with rice, lettuce leaves to wrap it in, and something sharp on the side.
👨🍳 The sugar crust at the end is the whole point, and it goes from caramel to burnt in about two minutes. Stand at the oven.
