⏱ 1 hr 20 min · medium · 🍽 serves 4
Ingredients
- 4 lb sweet potatoes, peeled and sliced 1/8 inch thick
- 2 cups heavy cream

- 6 sprigs thyme
- 2 cups grated Gruyere
- Fresh nutmeg
- 2 tsp kosher salt
- Black pepper

- Warm the cream with the garlic and thyme until steaming, then take it off the heat and let it sit 10 minutes. Fish out the garlic and thyme.
- Layer a third of the sweet potatoes in the dish, season with salt, pepper and a scrape of nutmeg, then a third of the cheese. Repeat twice.
- Pour the infused cream over the top and press down so the potatoes are submerged.
- Cover with foil and bake 40 minutes, then uncover and bake 25-30 more until the top is deeply browned and a knife meets no resistance.
- Rest 15 minutes before serving or it will run.
