Amazing Chicken Stir Fry
Velveting the chicken is what separates this from every sad weeknight stir fry.
⏱ 25 min · easy · 🍽 serves 4
Ingredients
- 1 1/2 lb chicken thighs, sliced thin
- 1 tbsp cornstarch
- 1 tbsp soy sauce plus 3 tbsp for the sauce
- 1 egg white
- 3 tbsp neutral oil
- 1 head broccoli, small florets
- 1 red bell pepper, sliced
- 4 garlic cloves, minced
- 1 tbsp grated ginger
- 1 tbsp rice vinegar
- 2 tsp sesame oil
- 1 tsp sugar
Steps
- Toss the chicken with the cornstarch, 1 tbsp soy sauce and the egg white. Let it sit 15 minutes. This is velveting and it is the whole difference.
- Whisk the remaining soy sauce, vinegar, sesame oil and sugar together and set it by the stove.
- Get a wok or wide skillet ripping hot. Add 2 tbsp oil and the chicken in one layer. Leave it 90 seconds before stirring, then cook 2 minutes more and remove.
- Add the last oil, then the broccoli and pepper. Stir hard for 3 minutes, adding a splash of water to steam them briefly.
- Add the garlic and ginger for 30 seconds until fragrant.
- Return the chicken, pour in the sauce and toss for 1 minute until it clings. Serve immediately.
👨🍳 Everything must be cut and measured before the pan gets hot. Stir fry gives you no time to chop.
