Amazing Shrimp Scampi
Emulsified butter sauce that clings instead of pooling.
⏱ 20 min · easy · 🍽 serves 4
Ingredients
- 1 lb large shrimp, peeled
- 12 oz linguine
- 4 tbsp butter
- 3 tbsp olive oil
- 6 garlic cloves, thinly sliced
- 1/2 tsp chili flakes
- 3/4 cup dry white wine
- Juice of 1 lemon
- 1/4 cup chopped parsley
- Kosher salt
Steps
- Boil the pasta in well salted water. Reserve a cup of the water before draining.
- Pat the shrimp dry and salt them. Sear in the oil over high heat, 1 minute a side, then remove. They will finish in the sauce.
- Lower the heat, add the garlic and chili and cook 1 minute until pale gold, not brown.
- Add the wine and reduce by half, about 3 minutes.
- Turn the heat to low and whisk in the butter one piece at a time until the sauce turns glossy. Off the boil, or it will break.
- Return the shrimp with the pasta, lemon juice, parsley and a splash of pasta water. Toss until it coats.
👨🍳 Cold butter whisked in off the boil is what makes it a sauce instead of melted fat.
