Mississippi-Style Pot Roast
Five things in a pot and eight hours of ignoring it.
⏱ 8 hr · easy · 🍽 serves 6
Ingredients
- 4 lb chuck roast
- 1 stick butter
- 10 pepperoncini, plus 1/4 cup of their brine
- 1 tbsp dried dill
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp kosher salt
- 1 tsp black pepper
Steps
- Season the roast heavily with salt and pepper and sear it hard on all sides in a hot pan. This is the only real work.
- Put it in a slow cooker or a Dutch oven with a lid.
- Mix the dill, garlic powder and onion powder and scatter over the top.
- Lay the butter on the meat, scatter the pepperoncini around it and pour in the brine. Add no other liquid.
- Cook on low 8 hours in a slow cooker, or at 300F for 4 hours covered, until it shreds with a fork.
- Shred and toss through the buttery juices.
👨🍳 No stock, no water. It looks wrong for the first hour and then the roast releases everything it needs.
