Cheese Quesadilla Triangles with Mild Salsa
Good cold, which most quesadillas are not. The trick is less filling.
⏱ 15 min · easy · 🍽 serves 4
Ingredients
- 4 flour tortillas
- 2 cups grated Monterey Jack
- 1/2 cup canned black beans, rinsed and mashed
- 1/4 tsp cumin
- Butter for the pan
- 1/2 cup mild salsa, for a small container
Steps
- Mash the beans with the cumin and a pinch of salt.
- Spread a thin layer over half of each tortilla, top with cheese and fold.
- Cook in a buttered skillet over medium heat, 3 minutes a side, pressing flat, until golden.
- Cool completely on a rack so they do not steam, then cut into triangles.
👨🍳 Cooling on a rack is what keeps them from going soggy. Salsa travels separately or the whole thing turns to mush.
