Roasted Brussels Sprouts with Bacon and Maple
The pan that empties first. Cut side down is the entire secret.
⏱ 35 min · easy · 🍽 serves 4
Ingredients
- 2 lb Brussels sprouts, halved
- 6 oz thick-cut bacon, cut crosswise into strips
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 tbsp apple cider vinegar
- Kosher salt and black pepper
Steps
- Heat the oven to 425F with a large sheet pan inside.
- Toss the sprouts with the oil, salt and pepper.
- Pull the hot pan out, scatter the bacon over it, then arrange every sprout cut side down. Crowding is fine, flipping them is not.
- Roast 22-25 minutes without stirring, until the cut sides are deeply browned and the bacon is crisp.
- Whisk the maple and vinegar together, pour it over the hot pan and toss once. Serve immediately.
👨🍳 Preheating the pan is what gets the char. A cold pan steams them.
