⏱ 30 min · easy · 🍽 serves 4
Ingredients
- 1 1/2 lb white fish such as cod, in strips
- 1 cup flour
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp cayenne
- 1 cup beer or sparkling water
- 1/2 head cabbage, shredded
- Juice of 2 limes
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 12 corn tortillas
- Neutral oil for frying
- Kosher salt
Steps
- Toss the cabbage with the juice of 1 lime and a good pinch of salt and leave it 20 minutes to soften and sharpen.
- Whisk the flour, spices and beer into a loose batter, about the thickness of cream.
- Stir the sour cream, mayonnaise and remaining lime juice together.
- Heat an inch of oil to 375F. Dip the fish in the batter and fry 3 to 4 minutes until golden. Drain on a rack.
- Char the tortillas over a flame and build the tacos at the table.
👨🍳 Salting the cabbage early is the step people skip. Twenty minutes turns raw shreds into actual slaw.
