Ingredients
- 2 lb green beans, trimmed
- 3 tbsp unsalted butter
- 3 shallots, thinly sliced
- 3 garlic cloves, thinly sliced
- 3/4 cup sliced almonds
- Zest of 1 lemon
- Kosher salt and black pepper
Steps
- Boil the beans in heavily salted water for 4 minutes, until bright green and barely tender. Plunge them into ice water and drain well. This can happen the day before.
- Toast the almonds in a dry skillet over medium heat until golden, about 4 minutes. Tip them out.
- Melt the butter in the same pan. Cook the shallots 5 minutes until soft and just starting to brown, then add the garlic for 30 seconds more.
- Add the beans and toss for 3 minutes until hot through.
- Off the heat, add the almonds, lemon zest, a good pinch of salt and plenty of pepper.
👨🍳 Blanching ahead is what makes this possible on a crowded stove. The last step is three minutes.
