⏱ 20 min · easy · 🍽 serves 4
Ingredients
- 4 white fish fillets such as cod or halibut, 6 oz each
- 1 cup fresh breadcrumbs
- 1/2 cup chopped parsley
- 2 tbsp chopped dill
- 3 garlic cloves, minced
- Zest of 1 lemon
- 5 tbsp olive oil
- Kosher salt and black pepper
- Lemon wedges
Steps
- Heat the oven to 425F. Pat the fish very dry and season it.
- Mix the breadcrumbs, herbs, garlic, lemon zest, 3 tbsp oil and a good pinch of salt until it clumps.
- Set the fish on an oiled sheet pan and press the crumb mixture firmly onto the top of each fillet.
- Drizzle with the last oil and bake 12-14 minutes until the crust is golden and the fish flakes.
- Serve with lemon wedges.
👨🍳 Press the crust on hard. Loosely scattered crumbs slide off the moment you lift the fish.
