Warm chickpeas and ice water. That is the entire secret to smooth hummus.
⏱ 20 min · easy · 🍽 serves 4
Ingredients
- 2 cans chickpeas, drained
- 1/2 tsp baking soda
- 2/3 cup tahini
- Juice of 2 lemons
- 2 garlic cloves
- 1/3 cup ice water
- 1 tsp kosher salt
- Olive oil, paprika and parsley to finish
Steps
- Simmer the chickpeas with the baking soda in fresh water for 15 minutes until very soft and some skins float free. Drain, keeping them warm.
- Blend the garlic and lemon juice first and let it sit 5 minutes, then strain out the garlic solids for a smoother, gentler flavor.
- Add the tahini and blend, then the ice water, until it turns pale and fluffy.
- Add the warm chickpeas and salt and blend a full 3 minutes. Longer than feels right is correct.
- Spread in a bowl, make a well, and pour in olive oil. Dust with paprika and parsley.
👨🍳 Warm chickpeas blend smooth, cold ones stay grainy. The baking soda softens the skins so you do not have to peel them.
