⏱ 1 hr · easy · 🍽 serves 16
Ingredients
- 1 cup butter, softened
- 1/2 cup sugar for the base
- 2 cups flour for the base
- 1/2 tsp kosher salt
- 6 eggs
- 2 1/2 cups sugar for the filling
- 1 cup lemon juice, about 6 lemons
- Zest of 3 lemons
- 2/3 cup flour for the filling
- Icing sugar to finish
Steps
- Heat the oven to 350F and line a 9x13 pan with parchment.
- Beat the butter, sugar, flour and salt to a crumbly dough and press it firmly into the pan.
- Bake 22 minutes until pale gold. Leave the oven on.
- Whisk the eggs, sugar, lemon juice, zest and flour until smooth and pour it over the hot base.
- Bake 25 minutes more until barely set with a slight wobble.
- Cool completely, then chill 2 hours before cutting. Dust with icing sugar at the last minute.
👨🍳 Pouring the filling onto a hot base is what fuses them. Onto a cold base it slides off in one piece when you cut it.
