Lentil Soup with Lemon
Cheap, filling and finished with enough lemon to wake it up.
⏱ 45 min · easy · 🍽 serves 4
Ingredients
- 1 1/2 cups brown lentils, rinsed
- 3 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery ribs, diced
- 4 garlic cloves, minced
- 2 tsp cumin
- 1 tsp coriander
- 8 cups vegetable stock
- Juice of 1 1/2 lemons
- Chopped parsley
- Kosher salt
Steps
- Cook the onion, carrot and celery in the oil for 10 minutes until soft.
- Add the garlic and spices and stir 1 minute.
- Add the lentils and stock, bring to a boil, then simmer 30 minutes until the lentils are tender and starting to break down.
- Blend about two cups of it and stir it back in, which thickens the soup without cream.
- Add the lemon juice and salt. Taste and add more lemon than you think, since lentils absorb it.
👨🍳 Season at the end, not the start. Salted early, lentils stay stubbornly firm.
