- 4 salmon fillets, 6 oz each
- 2 cups cherry tomatoes
- 1/2 cup pitted kalamata olives
- 2 tbsp capers, drained
- 4 tbsp olive oil
- 3 garlic cloves, sliced
- 1 tsp dried oregano
- 1 lemon
- Kosher salt and black pepper
- Handful of basil
Steps
- Heat the oven to 425F. Toss the tomatoes, olives, capers and garlic with 2 tbsp oil, oregano and salt on a sheet pan.
- Roast 10 minutes until the tomatoes begin to split.
- Push everything to the edges, add the salmon in the middle, rub with the rest of the oil and season.
- Roast 10-12 minutes more until the salmon flakes at its thickest point.
- Squeeze the lemon over everything and tear basil on top.
👨🍳 Giving the tomatoes a ten minute head start is what turns them into sauce instead of decoration.
