Soft-Scrambled Eggs with Buttered Toast Soldiers & Chive Crème Fraîche
Slow-curdled eggs finished off-heat stay custardy and rich — the ultimate 15-minute comfort in a bowl.
⏱ 15 min · easy · 🍽 serves 4
Ingredients
- 6 large eggs
- 3 tbsp unsalted butter, divided
- 2 tbsp crème fraîche (or sour cream)
- 1 tbsp chives, finely snipped
- 2 thick slices country bread or brioche
- Flaky salt
- Freshly cracked black pepper
Steps
- Crack the eggs into a cold nonstick pan or small saucepan with 2 tbsp butter — do not beat them yet. Set over medium-low heat.
- Stir constantly with a silicone spatula, scraping the bottom and sides, letting the yolks and whites break and marry as they warm. This takes 6–8 minutes; if the pan ever feels hot, lift it off the burner for 15 seconds and keep stirring.
- Meanwhile, toast the bread until deep golden, butter it generously with the remaining 1 tbsp, and cut into thick fingers.
- When the eggs look like small glossy curds in a loose custard — still slightly wetter than you want — pull the pan off the heat entirely. Residual heat finishes them.
- Fold in the crème fraîche and half the chives; season with flaky salt and pepper. This stops the cooking and adds tang and body.
- Spoon into warm shallow bowls, shower with remaining chives and a last crack of pepper, and stand the toast soldiers alongside for dipping.
👨🍳 The single biggest upgrade here is starting the eggs in a cold pan with the butter — you control the curd size the whole way instead of chasing it. And I mean it about pulling them early: eggs carry over like a steak. If they look perfect in the pan, they'll be dry in the bowl.
