Ingredients
- ½ cup mashed cooked sweet potato
- ⅓ cup coconut sugar
- 1 large egg
- ¼ cup Fancy Peasant Greek Extra Virgin Olive Oil
- 2 teaspoons vanilla bean paste
- 2 cups blanched almond flour
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- 1½ teaspoons ground cinnamon
- ⅓ cup dark chocolate chips
Steps
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the mashed sweet potato, coconut sugar, egg, Fancy Peasant Greek Extra Virgin Olive Oil and vanilla bean paste until smooth.
- In a separate bowl, combine the almond flour, baking soda, sea salt and cinnamon. Fold the dry ingredients into the wet ingredients until just combined, then stir in the dark chocolate chips.
- Chill the dough for 15 minutes so it firms up.
- Scoop the dough onto the prepared baking sheet, spacing each cookie about 2 inches apart. Gently flatten each one with the back of a spoon.
- Bake for 10–12 minutes, until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 10–15 minutes before moving them. They firm up as they cool.
👨🍳 Chill the dough and let the cookies cool on the sheet. Both steps keep them from falling apart.
