Tomato Braised Butter Beans
Creamy without a drop of dairy, because the beans do it themselves.
⏱ 35 min · easy · 🍽 serves 4
Ingredients
- 2 cans butter beans, drained
- 1/4 cup olive oil, plus more to finish
- 1 onion, sliced
- 5 garlic cloves, sliced
- 2 tbsp tomato paste
- 1 can crushed tomatoes, 28 oz
- 1 tsp smoked paprika
- 1/2 tsp chili flakes
- 1 cup vegetable stock
- Handful of basil
- Kosher salt
Steps
- Cook the onion in the oil 8 minutes, then the garlic 1 minute.
- Add the tomato paste, paprika and chili and stir hard 90 seconds.
- Add the tomatoes, stock and beans. Simmer 20 minutes uncovered.
- Mash a quarter of the beans against the side of the pot. That is where the creaminess comes from.
- Season, tear in basil and pour over a slick of raw olive oil.
👨🍳 Butter beans are the right bean here. Their skins break down into something genuinely creamy in a way cannellini do not.
