⏱ 15 min · easy · 🍽 serves 4
Ingredients
- 4 large flour tortillas
- 6 oz cream cheese, softened
- 8 oz sliced turkey
- 1 cucumber, cut into thin batons
- 1 cup baby spinach
- 1 tsp dried dill
- Pinch of salt
Steps
- Stir the dill and salt into the cream cheese.
- Spread a thin even layer over each tortilla, right to the edges. The cream cheese is the glue.
- Lay the turkey over the whole surface, then a line of cucumber and spinach across the bottom third.
- Roll tightly from the bottom, pressing as you go. Wrap in plastic and chill at least 30 minutes.
- Trim the ends and slice into 1 inch rounds.
👨🍳 Roll them the night before. They slice cleanly cold and fall apart warm. Six pinwheels fills a lunchbox.
