The panade and the ricotta do what fat usually does.

Ingredients
- 2 lb ground turkey, dark meat if you can
- 1 cup panko
- 3/4 cup milk
- 1/2 cup ricotta
- 1 egg
- 1/2 cup grated parmesan
- 3 garlic cloves, minced
- 1/4 cup chopped parsley
- 2 tsp kosher salt
- 1 can crushed tomatoes, 28 oz
- 2 tbsp olive oil
Steps
- Soak the panko in the milk 5 minutes until it is a paste.
- Mix gently with the turkey, ricotta, egg, parmesan, garlic, parsley and salt. Handle it as little as possible.
- Roll into balls and brown them in the oil, in batches, about 5 minutes. They will not cook through yet.
- Add the tomatoes, season, and simmer 20 minutes until cooked through and the sauce has thickened.
👨🍳 Turkey has no fat to forgive you with. The soaked panko and the ricotta are the whole reason these stay tender.
