    Sweet and morning

    Zorzal Comunitario 70% bar

From Dandelion Chocolate · San Francisco · @dandelionchocolate

Dandelion makes bean-to-bar chocolate in San Francisco's Mission with just two ingredients, cacao and cane sugar. Each bar comes from one place; Zorzal Comunitario is cacao from the farms around the Reserva Zorzal bird sanctuary in the Dominican Republic, and it tastes of chocolate cake and tamarind.

Two ingredients and you can taste where it grew. Bake it into brownies and they taste like nothing out of a box.

    You need

    • 3 bars (about 170 g) Dandelion Zorzal Comunitario 70% chocolate, chopped
    • ½ cup (113 g) unsalted butter
    • 1 cup (200 g) sugar
    • 2 large eggs plus 1 yolk, at room temperature
    • 1 tsp vanilla extract
    • ½ tsp kosher salt
    • ½ cup (65 g) all-purpose flour
    • 2 tbsp cocoa powder
    • Flaky salt, to finish

    How to make it

    1. Heat the oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving some hanging over the sides.
    2. Melt the chocolate and butter together in a bowl over barely simmering water, stirring until smooth. Let it cool a few minutes.
    3. Whisk in the sugar, then the eggs and yolk one at a time, then the vanilla and salt, until glossy.
    4. Sift in the flour and cocoa and fold until no streaks remain.
    5. Spread in the pan and bake 25 to 28 minutes, until the top is set and a skewer comes out with moist crumbs.
    6. Sprinkle with flaky salt and cool completely before cutting into 16.
