    Pragati Turmeric

From Diaspora Co. · Oakland, California · @diasporaco

Sana Javeri Kadri started Diaspora Co. in 2017 with one spice: a turmeric grown by a single farm in Andhra Pradesh, paid for at many times the commodity price. It's now a whole spice shelf sourced farm by farm, and Pragati, the first one, is still the one people fall for. It's so bright it barely looks real.

Once you've had real turmeric you can't go back to the dusty jar. This egg curry is the proof, and it's on the table in half an hour.

    You need

    • 8 large eggs
    • 3 tbsp coconut oil
    • 2 tsp coriander seeds
    • 4 shallots (about 300 g), thinly sliced
    • 1½ tsp kosher salt
    • 1 tbsp Byadgi or Kashmiri chili powder
    • 1 tsp Diaspora Co. Pragati Turmeric
    • ¼ tsp black pepper
    • 1 can (14 oz / 400 ml) coconut milk
    • Juice of ½ lemon
    • Rice, to serve

    How to make it

    1. Boil the eggs for exactly 7 minutes, then move them to ice water. Peel and score each one lengthwise 3 or 4 times, just through the white.
    2. Warm the coconut oil in a wide pan over medium heat and toast the coriander seeds until fragrant, about 30 seconds.
    3. Add the shallots and salt and cook, stirring, until soft and golden, 10 to 12 minutes.
    4. Stir in the chili powder, turmeric and black pepper for 30 seconds.
    5. Pour in the coconut milk and ½ cup water and simmer gently for 8 to 10 minutes, until slightly thickened.
    6. Add the eggs, spoon the sauce over them and simmer 3 minutes more.
    7. Squeeze in the lemon, taste for salt and serve over rice.
