    Chorizo Rioja

From Olympia Provisions · Portland, Oregon · @olympiaprovisions

Elias Cairo learned to cure meat as an apprentice in Switzerland and came home to Portland to open Oregon's first USDA-certified salumeria in 2009. Olympia Provisions still makes everything by hand. The Chorizo Rioja is a dry-cured Spanish-style chorizo with smoked paprika and garlic.

Real dry-cured chorizo, made by hand in Portland. Slice it for a board, or let it melt into a pot of kale and potato soup.

    You need

    • 1 Olympia Provisions Chorizo Rioja (about 8 oz / 225 g), sliced into half-moons
    • 2 tbsp olive oil
    • 1 onion, chopped
    • 3 garlic cloves, sliced
    • 1½ lb (680 g) Yukon gold potatoes, cut into ¾-inch cubes
    • 6 cups (1.4 l) chicken stock
    • 1 bay leaf
    • 1 bunch Tuscan kale, stems removed, leaves sliced
    • Kosher salt and black pepper
    • 1 tbsp sherry or red wine vinegar
    • Crusty bread, to serve

    How to make it

    1. Warm the oil in a soup pot over medium heat and cook the chorizo until it browns and gives up its red fat, about 5 minutes. Lift out half for the top.
    2. Add the onion with a pinch of salt and cook until soft, 6 to 8 minutes. Add the garlic for 1 minute.
    3. Add the potatoes, stock and bay leaf, bring to a boil, then simmer until the potatoes are tender, 15 to 18 minutes.
    4. Mash a few potatoes against the side of the pot to thicken the soup.
    5. Stir in the kale and simmer 5 minutes, until silky.
    6. Season with salt, pepper and the vinegar, then serve topped with the reserved chorizo and with bread.
