Chicken soup with ginger, turmeric, rosemary and thyme, made hearty with pearl couscous and peas.
You need
- 1 tbsp avocado or olive oil
- 6 garlic cloves, minced
- 1 yellow onion, diced
- 2 large carrots, thinly sliced
- 2 celery stalks, chopped
- 1 tbsp grated fresh ginger
- 1 tbsp grated fresh turmeric (or 1 tsp ground)
- 6 cups low-sodium chicken broth
- 1 lb boneless skinless chicken breasts or thighs
- 1 tsp chopped fresh rosemary
- 1 tsp fresh thyme leaves
- 1/2 tsp salt
- Black pepper
- 1 cup pearl couscous
- 2/3 cup frozen peas
How to make it
- Heat the oil in a large pot over medium-high heat. Add the garlic and onion and cook 2 minutes, then add the carrots and celery and cook until the onion turns translucent, 3 to 4 minutes.
- Stir in the ginger and turmeric for 30 seconds.
- Add the broth, chicken, rosemary, thyme, salt and pepper. Bring to a boil, then cover, lower the heat and simmer until the chicken is cooked, about 20 minutes.
- Lift out the chicken and shred it with two forks.
- Bring the soup back to a boil, add the couscous and cook uncovered until tender, about 8 minutes.
- Return the chicken, add the peas and cook 1 minute. Taste for salt and pepper and serve.
