A green soup of finely chopped jute leaves in chicken or rabbit broth, sharpened with fried garlic and coriander, eaten with rice or bread.
Molokhia is Egypt's home cooking, the soup every grandmother makes. In Cairo, the place that serves it the old way with style is a Zamalek dining room full of brass lamps.
Get: The molokhia with rabbit or chicken, rice, and the mezze to start
What to say
ملوخية بالأرانب لو سمحت (molokhia bil araneb, law samaht).Molokhia with rabbit, please.
Cairo's best-known Egyptian dining room, built like a 1930s family house, serving the dishes Cairenes grew up with; the molokhia comes with the garlic still sizzling.
Frozen minced molokhia from a Middle Eastern market makes this easy. The magic is the taqleya, garlic and ground coriander fried in butter and stirred in at the last second (Egyptian cooks gasp as it goes in, for luck).
2 packs (14 oz / 400 g each) frozen minced molokhia, thawed
For the taqleya: 3 tbsp ghee or butter, 10 cloves garlic, crushed, 1 tbsp ground coriander
1/2 tsp cayenne (optional)
To serve: white rice or pita, lemon wedges, and sliced onion soaked in lime juice
How to make it
Put the chicken in a large pot with the water, onion, cardamom, bay, cinnamon and salt. Bring to a boil, skim, then simmer 50 minutes until tender.
Lift out the chicken. Strain the broth; you need about 6 cups. Roast or pan-fry the chicken pieces in a hot oven (450°F / 230°C) 15 minutes to brown the skin, if you like.
Bring 6 cups of the broth to a simmer. Stir in the molokhia, and bring it just to a bubble, stirring, 3-5 minutes. Don't boil it hard or the leaves sink and separate. Taste for salt.
For the taqleya, warm the ghee in a small pan over medium heat. Add the garlic and fry 2 minutes, stirring, until golden. Add the coriander and cayenne for 30 seconds.
Pour the sizzling taqleya into the molokhia and stir once. Turn off the heat.
Serve the molokhia in bowls with rice or bread, the chicken on a plate beside it, and lemon and the lime-soaked onion.
Pans and tools
Large pot
small frying pan

Chef's tips
If you find fresh leaves, strip them and chop very finely with a two-handled mezzaluna.
Rabbit is the Cairo restaurant classic; cook it the same way, about 1 hour.
Don't let the garlic go dark brown: golden is right.
Contains: dairy.

What to say
Shorbet ads, min fadlak.Lentil soup, please.
A downtown Egyptian restaurant open since 1959, a reliable place for the everyday classics.
1 1/2 cups (300 g) red lentils, rinsed until the water runs clear
2 tbsp short-grain rice or bulgur
7 cups (1.7 l) chicken or vegetable stock or water
1 1/2 tsp kosher salt
For the paprika butter: 3 tbsp butter, 1 tsp sweet paprika or Aleppo pepper, 1 tsp dried mint
Lemon wedges and bread, to serve
How to make it
Heat the oil and butter in a large pot over medium heat. Add the onion and carrot and cook 8 minutes, stirring, until soft and lightly golden.
Stir in the tomato paste, pepper paste and cumin and cook 1 minute, until fragrant.
Add the potato, lentils, rice and stock. Bring to a boil, skim any foam, then simmer partly covered 25 to 30 minutes, stirring now and then, until the lentils have collapsed completely.
Blend until completely smooth, using an immersion blender or in batches in a blender (vent the lid). Return to the heat, add the salt, and thin with hot water if it's thicker than heavy cream. Simmer 5 minutes.
Make the paprika butter: melt the butter in a small pan over medium heat until it foams, take it off the heat, and stir in the paprika and mint. It should turn brick red and smell toasty, about 30 seconds.
Ladle into bowls, drizzle each with the red butter and serve with lemon wedges and bread.
Pans and tools
4-quart pot
immersion blender or blender
Chef's tips
Rinse the lentils well or the soup will taste dusty.
It thickens as it stands; loosen with hot water when you reheat.

2 tsp salt, 1 tsp cumin
How to make it
Simmer the lamb with the onion, spices and salt in the water 2 hours. Lift out the lamb and strain the broth.
Cook the rice in 3 cups (720 ml) of the broth until tender.
For the sauce, fry the garlic in the ghee 1 minute, add the vinegar and boil 1 minute, then the tomato and cumin and simmer 10 minutes.
Brown the lamb pieces in a hot oven or pan.
In a deep platter layer the toasted bread, soak with 2 cups (480 ml) hot broth, spoon over half the sauce, add the rice, then the rest of the sauce and the lamb. Serve with cups of broth.
