‹ The story: The sandwich worth planning a morning around
A day in Ortigia, Siracusa · Italy
Ortigia is an island you can cross on foot in fifteen minutes, and the best day here runs on the market's clock: granita for breakfast, the market before it gets hot, Borderi's sandwich at ten, eaten on the sea wall, then the slow hours, a sunset glass on the western wall and dinner in an alley.
The star is Caseificio Borderi, the place from the story. The dotted line is the walk, in order. All on foot, about 4 km door to door. Flat, but the lanes are stone: wear real shoes.
Get: Almond granita with a warm brioche to dunk. Lemon if it's hot.
One of the oldest bars on the island, a few steps from the cathedral. In Siracusa, granita and brioche is breakfast, not dessert.
Open early. Some listings say it closes Thursdays: check that day.

Get: Walk the fish stalls first, then taste: Pachino tomatoes, olives, capers. Buy pistachio pesto and dried oregano to take home.
The island's morning market: fishmongers calling out the catch, fruit, spices and street food along two streets by the Temple of Apollo.
Monday to Saturday, about 7am to 1:30pm. Closed Sunday. Before ten is best.

Get: The chef's choice sandwich. Then the cheese and salumi platter if you're two or more.
A cheese stall in Ortigia's market, a guy with a knife, and a line you should get in early.
Via Emmanuele de Benedictis 6, by the Ortigia market. Mornings Monday to Saturday, closed Sunday. Get there before noon.

4The Borderi sandwich
Do: Take the sandwich, the platter and the cannoli to the wall on the east side and eat looking at the sea.
This is the move from the story: no table, no wait, the Ionian in front of you.
Bring napkins. Borderi gives you plenty.

5An Ortigia lane on the way
Do: Walk south through the lanes to the cathedral square, then down to the freshwater spring with papyrus growing in it, right by the sea.
Walk the sandwich off past the cathedral (built into a Greek temple: you can see the columns) to the spring the Greeks built a city around.
Afternoon is quiet here: many shops close from about 1:30 to 4:30. Rest, swim, nap.

Get: A cold glass of Sicilian Grillo and whatever comes with it, at any of the bars along the wall.
The west side faces the big harbor and the sunset. The whole town strolls it before dinner.
Get there half an hour before sunset for a front table.

Get: Spaghetti with clams, octopus stewed in tomato, and the blood-orange and onion salad.
A family osteria that has been feeding Siracusa for years: Sicilian home cooking, fair prices, tables in the lane.
Lunch and dinner; sources disagree on the day it closes (Monday or Tuesday). Book dinner.
Or: Want white tablecloths instead? Don Camillo, Via Maestranza 96.
