Cranberry sauce with orange

Fifteen minutes on the stove, a week in the fridge. Fresh orange zest makes it taste brighter than anything in a can.

When to make it

Make it up to a week ahead. It sets as it cools.

Add it to your plan and Chef puts these on the right days, and fits it into your oven on Thursday.

For 12

  • 1¾ lbfresh cranberries two 12-oz bags
  • 1¾ cupssugar
  • 1orange zest and juice
  • 1 cupwater
  • 1 pinchkosher salt
  • 1cinnamon stick

How to make it

  1. Simmer

Put the sugar, water, orange juice and cinnamon stick in a saucepan and bring to a boil, stirring until the sugar dissolves. Add the cranberries and salt and simmer 10 minutes, until most of the berries have popped and the sauce thickens.

  2. Finish

Off the heat, stir in the orange zest and take out the cinnamon. Cool, then refrigerate. It thickens a lot as it chills.

Chef's notes

  • A splash of port or Grand Marnier at the end is a good grown-up version.
