The real version of the classic: snappy fresh beans in a creamy mushroom sauce under a pile of crisp fried shallots. No cans.

Blanch the beans and make the sauce up to 2 days ahead. Fry the shallots the day before and keep them in an airtight tin. Assemble and bake Thursday.
Add it to your plan and Chef puts these on the right days, and fits it into your oven on Thursday.
Boil the beans in well-salted water 4 minutes, until bright green and just tender. Drain and plunge into ice water, then dry well.
Melt the butter in a large skillet over medium-high heat. Cook the mushrooms until browned and their liquid is gone, 8 to 10 minutes. Add the garlic for 30 seconds, sprinkle in the flour and stir 1 minute. Stir in the stock, then the cream, and simmer until thick, 4 minutes. Season.
Toss the shallot rings in the flour with a pinch of salt. Heat the oil in a small pot to 350°F and fry in batches 2 to 3 minutes, until deep golden. Drain on paper towels and salt them.
Fold the beans into the sauce, spread in a 9 by 13-inch dish and bake at 375°F for 20 minutes, until bubbling. Pile the shallots on top and bake 5 minutes more.
