Make the dough up to 3 days ahead; bake Wednesday. Keeps at room temperature for 2 days.
Add it to your plan and Chef puts these on the right days, and fits it into your oven on Thursday.
Make and chill the dough as for pumpkin pie, roll it into a 9-inch plate, crimp and chill 15 minutes. Blind bake at 400°F for 15 minutes with foil and beans, then 5 minutes without.
Toast the pecans at 350°F for 8 minutes, until fragrant.
Whisk the eggs, syrup, sugar, melted butter, bourbon, vanilla and salt. Scatter the pecans in the crust and pour the filling over.
Bake at 350°F for 45 to 55 minutes, until the edges are set and the center puffs and barely jiggles. Cool at least 3 hours so it slices cleanly.
