Pumpkin pie
Silky, deeply spiced and baked in an all-butter crust. Pull it when the middle still wobbles and it sets with no cracks.

Make the dough up to 3 days ahead. Bake the pie Wednesday; it's better after a night in the fridge.
Add it to your plan and Chef puts these on the right days, and fits it into your oven on Thursday.
Mix the flour and salt, then rub in the butter with your fingers until the pieces are the size of peas. Sprinkle in the ice water and toss until it holds together when squeezed. Flatten into a disc, wrap and chill at least 1 hour.
Roll the dough to a 12-inch round and fit it into a 9-inch pie plate. Crimp the edge and freeze 15 minutes. Line with foil, fill with dried beans and bake at 400°F for 20 minutes. Lift out the foil and beans and bake 8 minutes more, until dry and pale gold.
Whisk the pumpkin, sugar, eggs, cream, milk, spices and salt until smooth. Pour into the warm crust.
Turn the oven down to 350°F and bake 45 to 55 minutes, until the edges are set and the center 2 inches still jiggle like gelatin. Cool completely on a rack, at least 2 hours, then refrigerate.
