  • ¼ cupfresh sage, chopped
  • 1 cupflat-leaf parsley, chopped
  • 5 cupschicken or turkey stock
  • 4eggs
  • 2 tspkosher salt

How to make it

  1. Dry the bread

Cube the bread and dry it out 1 to 3 days, or 40 minutes in a 275°F oven.

  2. Brown the sausage

In a large skillet over medium-high heat, cook the sausage, breaking it into small pieces, until well browned, 8 minutes. Scoop it into a bowl, leaving the fat.

Add the butter, onion and celery to the pan and cook 8 minutes. Add the apples and sage and cook 3 minutes more.

  4. Mix and bake

Toss the bread with the sausage, vegetables and parsley. Whisk the eggs, stock, salt and pepper and fold it in. Spread in a buttered 9 by 13-inch dish, cover with foil and bake at 375°F for 25 minutes, then uncovered 20 minutes, until crisp on top.

Chef's notes
