When to make it

Roast and mash the sweet potatoes up to 2 days ahead. Assemble Wednesday, keep the topping separate, bake Thursday.

Add it to your plan and Chef puts these on the right days, and fits it into your oven on Thursday.

For 12

  • 4¾ lbsweet potatoes
  • 1 stick (7 tbsp)unsalted butter melted
  • ½ cuplight brown sugar
  • 2½eggs
  • ½ cupwhole milk
  • 1¼ tspvanilla extract
  • 1¼ tspground cinnamon
  • ¼ tspground nutmeg
  • 1¼ tspkosher salt
  • 1 cuplight brown sugar for the crumble
  • ½ cupall-purpose flour
  • 1 stick (7 tbsp)unsalted butter cold, for the crumble
  • 1¼ cuppecans chopped

How to make it

  1. Roast

Heat the oven to 400°F. Prick the sweet potatoes, set them on a foil-lined sheet pan and roast 50 to 60 minutes, until very soft and leaking syrup. Cool, peel and mash until smooth.

  2. Season

Beat in the melted butter, sugar, eggs, milk, vanilla, cinnamon, nutmeg and salt. Spread in a buttered 9 by 13-inch dish.

  3. Crumble

Rub the brown sugar, flour and cold butter together with your fingers until it clumps, then mix in the pecans. Scatter it over the top.

  4. Bake

Bake at 375°F for 35 minutes, until the edges bubble and the topping is crisp and brown.

Chef's notes

  • Roasting, not boiling, keeps the sweet potatoes from going watery.
