No. 23The one to order off the fire
The chopped whole hog with cracklings mixed in, on a cardboard tray with cornbread
What it burns: Oak and hickory coals under whole hogs
The Jones family has cooked whole hogs over wood since 1947; the chopping on the block is the sound of the place.

About 8 hr, 30 min hands-on · 8 people. Whole-hog cooks mop with a peppery vinegar sauce, and a bone-in shoulder cooked low gives you the same pull-apart meat and crisp bark at home. Pile it on a soft bun, Burnt Ends style, or eat it on a tray with slaw.
