No. 37The one to order off the fire
A tlayuda with tasajo and chorizo, folded and grilled over the coals
What it burns: Charcoal braziers on the sidewalk
A night-only sidewalk spot where the big tortillas crisp over charcoal on the street.
45 min plus 1 hr marinating · 4 people. In Oaxaca's smoke hallway, thin sheets of salted beef (tasajo) and chorizo go over charcoal and onto the table with tortillas and salsas. Thinly sliced flank or skirt is the home version.
