Cranberry rosemary mocktail
Photo: The Mediterranean Dish
A rosemary syrup, tart cranberry juice and plenty of bubbles. It looks like a party in a glass, and the kids and the drivers get one too.

Steeping the rosemary off the heat gives you the pine flavor without bitterness.
You need
- 1/2 cup granulated sugar
- 1/2 cup water
- 3 sprigs fresh rosemary, plus more to garnish
- Ice
- 1 cup unsweetened cranberry juice, chilled
- 4 cups sparkling water, chilled
- 4 tbsp fresh or frozen cranberries
- Lime wedges, to garnish
How to make it
- Whisk the sugar and water in a small saucepan over medium-low heat, add the rosemary and bring to a simmer, whisking often, about 5 minutes.
- Take it off the heat, cover and let it steep 10 minutes. Strain and chill.
- Fill 4 tall glasses with ice. Add 2 tablespoons of rosemary syrup to each, then divide the cranberry juice among them.
- Top with sparkling water, add a tablespoon of frozen cranberries to each and stir. Garnish with lime and a rosemary sprig.
Chef's notes- The syrup keeps 2 weeks in the fridge.
- Want a cocktail? Add 1 1/2 oz gin or vodka to a glass.
