The one to order
Panino con lampredotto, bagnato: the bun dipped in the broth, with salsa verde and spicy oil
A stall in the old food market since 1872; the lampredotto (a cut of tripe simmered for hours) is the sandwich Florentines grew up on.
3 hr (20 min hands-on) · 6 panini. Florence's street sandwich: tripe (lampredotto) or beef simmered for hours in a vegetable broth, chopped onto a crusty roll whose top is dipped in the broth, with green sauce and chili oil. At home, beef brisket gives you Rome's allesso the same way.
